Viking Honey Cake: Sweet Gold From the Oven
Moist Viking-style honey loaf cake: easy 5-ingredient recipe - honey instead of sugar, just like the North baked a thousand years ago.
The North knew no sugar - anyone who wanted to bake sweet needed honey. Which is exactly why this cake tastes the way sweetness tasted a thousand years ago: warm, floral, honest. Five ingredients, one loaf pan, no frills. Straight from our cookbook Viking Feast.

Ingredients
- 1 ½ cups flour (rye or wheat) - 200 g
- ½ cup honey - 100 g
- 1 egg
- 3 ½ tbsp butter - 50 g (softened)
- 1 tsp baking powder (modern addition)
Instructions
- Mix honey, egg and softened butter until smooth.
- Add flour and baking powder, then stir into a batter.
- Pour into a loaf pan.
- Bake at 350°F (180°C) for about 35 minutes, until golden and firm.
- Let cool and serve.
Fun fact: Honey was the only sweetener available to the Vikings - used not only for mead, but also for sweet dishes like this one.
The Skald’s Tip
Rye flour makes the cake darker and spicier - closer to the original. Brush it with a little butter while still warm and it will gleam like amber. And to see what else the Vikings made from honey, try our recipe for homemade mead.
